Mainly intended for export, this soft cheese with a bloomy rind is a triple cream cheese weighing about two kilograms.
Underneath a fluffy rind lies a generous chalky heart. In the mouth, lactic notes predominate. With maturing, the cheese is uniform and very stable.
We source our milk from local producers. Production still takes place by hand: moulding with a ladle, turning by hand …. maturing in our cellars.
The Domaine du Vallage refers to the former name of the cheese dairy.
